Everything Edible + Greek GIVEAWAY

Hello dearest readers. So close to Friday, aren’t we? I can almost taste it. Speaking of taste, let me share with you everything edible about my Thursday. I started my day with a bowl of pear-almond oatmeal — nothing you haven’t seen me eat before. I think I’m due for some new oatmeal combos [hint hint.]

1 cup water

1/2 cup rolled oats

1/2 d’anjou pear

1/2 T ground flax + cinnamon

almonds + agave

I had the house to myself again this a.m., so that meant blasting T.Swift and registering for Fall classes. I know…already? That’s college for you – ya never stop. Finally, after 6 semesters of registering for classes, it’s starting to get easier. I was able to get all the classes I needed; but, unfortunately, my schedule is all over the place. There’s always some bad with the good. Here’s what will be on my academic plate for Semester #7 [16 units in all].

  1. Human Physiology + lab
  2. Science of Food + lab
  3. Human Nutrition
  4. Foodservice Administration
  5. Consumer Health [online]

Before catching the bus, I threw a bar and an orange in my backpack…which would later become my lunch. I got this Honest Bar while in Sonoma over the weekend. It was a first for me. Honestly, I wasn’t as impressed as I thought I would be. The almond extract was extremely overpowering and left quite the aftertaste. Yet, I’ll give it texture props. I’m hoping the PB + Chocolate flavor will get a better score from the Nutrition Nut.

My food lab was cancelled today, so I went to the gym during the time I would normally be cooking with my classmates. Working out in the middle of the day felt really off; as a result, my exercises weren’t all that energetic:

indoor track run – 1.5 mi.

30 min. Arc Trainer

wimpy abs + arms

A little bit of different schedule today meant that I didn’t have to make dinner in a hurry, or eat at a ridiculously late hour.

I made blog-inspired sweet potatoes:

  1. Peel & cut sweet potatoes.
  2. Toss in a large bowl with a drizzle of olive oil, baby drizzle of maple syrup, cinnamon, ground flax and sea salt. [I measured everything with my naked eye.]
  3. Bake @ 325* for 20 minutes.
  4. Flip flop.
  5. Bake @ 350* for 10 minutes.

Life’s Unfair Itinerary

Hey. I really should not be spending the time to blog write now, but I’m hoping that a little writing will help with my angry, sad, anxious and stressed emotions. Today started out well; I love having Thursday mornings to hang around the house. I began my day by scraping the container of my 0% Greek + 1/4 cup Raisin Bran, 1/4 cup Humboldt Honey Granola & 1/2 banana.

Love the stats! Ya’ll know that Greek has 2x the protein, fewer carbs & less sugar than regular yogurt, right?

Lunch was another oldie, but goodie: Low-Fat Cottage Cheese & Raw Veggies. Operation Empty Fridge is almost complete!

Blog 269 020

It was nice to have the sun peaking out again today, but I don’t understand why it can’t stick around for just 1 day longer! It is supposed to dump buckets tomorrow – the day I’ve been planning to drive home for Winter Spring Break. My 4-hour drive is not exactly an easy one either; therefore, creating the anxiousness.

Just before leaving for The Resort for my final gym workout before Break, I got a call from my mama. I love talking to my mom, but tonight she didn’t have good news…awful news actually. She called to tell me that our really close family friend passed away this morning from cancer. Although I was not surprised by the news, I was enraged. I just do not get why life has to take away the most innocent, kind, good-hearted people. I just don’t get it! My heart is aching for her 12, 16, and 22-year-old kids, and loving husband : (

The memorial is scheduled for Sunday at this point…the day of my race. Life’s itinerary is just not in sync right now. I’ve been really looking forward to my 10-mile run on Sunday, but now I may only be running the 4-mile course in order to make it to the service.

Just in case I end up running the 10-miler (cross my fingers), I got in some quality running. The atmosphere of the gym was totally dead tonight (everyone’s checked outta here!), but I didn’t need any more distractions during my “therapy” run.

  • 1.5-mile indoor track run
  • 3.25-mile treadmill run – 5 minutes ea. @ 6.0, 6.2, 6.4, 6.6, 6.8, 7.0mph
  • 1.5-mile indoor track run

I apologize for such a downer post. I’ve got a lot tumbling around in my mind and so much to do before I leave town – which I’m hoping is tomorrow.

No Pain No Gain

Hi Ya’ll!

Woo…it’s already 8:30pm and I’m just now finishing up my dinner and beginning to blog [it’s quite the process]. I must make it quick tonight though, as I have to study for my 1 exam & 2 quizzes that I have tomorrow [surprise surprise].

Breakfast, oh Breakfast…if only you knew how much I dearly love you.

A reader suggested I try mixing my regular rolled oats and oat bran, so that’s exactly what I did. Oh, and props to me for trying new combinations and going outside of my [food] box lately.

In the mix:

– 1 cup water

– 1/3 cup rolled oats

– 1/3 cup oat bran

– 1/2 T ground flax

– cinnamon

Toppings:

– 1/2 d’anjou pear

– 1 T walnuts

– drizzle of agave

– big splash of 1% milk

I was dreading today’s 3-hour organic chem lab – as we had our first lab exam + 2 labs to finish – but it wasn’t as horrific as I was anticipating, and I came out alive the full 3-hours later. I ate a late lunch after class, including half of a succulent orange and leftover mac & cheese. FYI, Annie’s + Avocado = A-mazing!

Then there was some time wasted before I headed to the gym to get my March move on! I had a fabulous workout:

40-minute spin [15.0 mi.]

20-minute treadmill run [10 minutes @ 6.0mph (incline 2.0), 6 minutes @ 6.6mph, 4 minutes @ 6.8mph]

– 2 x 20 lat pulldown @ 40 lbs.

– 20 side dips each side @ 10 lbs.

– 2 x 10 bicep curl lunges each leg @ 20 lbs.

– 2 x 10 squats @ 20 lbs.

– 2 x 10 “weights-to-chin” @ 20 lbs.

– 2 x 10 “toe-touches” @ 20 lbs.

I can’t believe I didn’t look at the treadmill to see how far I’d run – my guess is around 2.5 miles. I definitely pushed myself tonight, especially with the faster treadmill speed. I know I am strong, but rarely push myself to my maximum potential. They only way to get stronger is by exerting more effort. No pain, no gain!

Dinner: steamed TJ’s Vegetable Gyoza + broccolini with soy sauce, toasted sesame oil & seseame seeds.

You think a few potstickers are going to do it for me after burning all those calories? You’ve got to be kidding. Next was some 0% Greek & Humboldt Honey Granola. I think I could eat this for breakfast, lunch, and dinner : )
