While We Wait

Although the blog surgery hasn’t gone as scheduled [still currently sitting in the waiting room], life must go on… and it has.

Yesterday, my aunt hosted a family dinner. Of course there were green, gourmet eats, including:

003 classic homemade hummus with fresh green parsley + raw veggies to start

025 …and homemade, bistro-style pizza with baby green spinach, artichoke hearts & chevre – two thumbs up!


Today went a little like this:

— Run with Ali, Amy & Stacy [50 min.]

— Run errands

— Meet Mom for lunch

— Fresh, spring haircut – bye bye long, winter locks

— Gather ingredients at the local co-op

— Smile due to SUNSHINE!

— Bake, bake, bake

— Realize Day Light Savings is glorious for running addicts

— Slip into shorts & ugly new race tee

Run Sprint around town [32 min.]

— Eat homegrown green salad for dinner

— Watch Food, Inc. with my dad & contemplate never eating meat again

035 I made mounds of Cheery Cherry Almond Granola

054 …and was even nice enough to share some with friends. Truth be told, I could eat a trough of this stuff, but I set a goal – remember?

I also made brown bread…perhaps a beautiful photo will appear for breakfast tomorrow?

Hard to believe Break is almost over. Hasn’t exactly turned out as I had planned, but I never regret a trip home.

Eat well. Be well… and watch FOOD, INC.

    Food Inc definitely had an effect on me. I had starting eating organic, local foods prior to watching the movie but had never contemplated giving up meat. After watching it I stopped eating meat (but still eat fish). I’m also loving daylight savings time and the fact that it is FINALLY warming up around here and spring is just around the corner!!

    You have such a great blog ~ I’m trying to get better at running…it’s not going so well haha. I dont have the patience for it. I play soccer, so I’m used to chasing something. Great stuff here tho!

    Ahhh I adore this post. From the hummus to the most beautiful and GREEN picture of you, nice legs my dear! To your granola and Food Inc. Some of my favorite things in this post! Your granola looks amazing, and so glad you enjoyed Food Inc… but from a culinary perspective, don’t say no to meat just yet! That’s one reason why I didn’t like Food Inc… because even though it needs to be shown in that way, sometimes I think it scares people away from all meat in general. When that shouldn’t be the case! Find where your meat is coming from, choose from good sources, farmer’s markets, etc. :) We were meant to eat meat! hehe. I mean, can you imagine life without bacon?

      Aw, thanks Bekah. I agree with you in that people shouldn’t be afraid of meat, but should simply learn more about what they’re actually eating and make changes. However, before watching the movie I was already mostly vegetarian, so it gave me that extra push: Do I really want to be 100% vegetarian? I haven’t eaten any meat in 8 weeks…minus a couple servings of fish. Pescatarian? I don’t know just quite yet : )
